Trifolium pratense (Leguminosae)
- This relative of peas and beans is originally from Europe. In the U.S.A. it is farmed as a food for
livestock and to add nitrogen to the soil, but in many cultures (including China) humans also enjoy eating it. Clover is full of vitamins,
and recent research shows evidence of medicinal value as well. All the edible wild plant books recommend tea made from the fresh blossoms (no brown bits),
although I have never done this...Blooms in summer.
